Mixing tins

The rule of thumb is simple: stir cocktails made only with spirits; shake cocktails with juice, syrup, egg, or dairy. Stirring cools and dilutes in a controlled way without adding air bubbles, keeping a Martini or Negroni clear and silky smooth. Shaking adds air and texture to the glass, exactly what you want in a sour or a daiquiri. With a tin, you can do both: it is sturdy enough for vigorous shaking and wide enough to stir in comfortably.

Stainless steel conducts heat quickly. You notice it immediately: within a few seconds, condensation forms on the outside of the tin, signaling that the drink is at the right temperature. So you don't need to check the clock; you can simply feel it. A single-wall tin provides the clearest feedback; if you want the contents to stay cold longer without condensation forming, choose a double-wall tin.

A tin with a pouring spout makes pouring over a strainer much smoother. You keep the stream narrow and controlled, allowing you to stay just above the serving glass without drops running over the rim. During a busy service, that means less cleaning and helps keep your bar tidy. Choose a capacity that suits your workflow: around 80 cl gives you room for two drinks at once, plus ice.

Rinse your tin after every drink, especially if it contained dairy or egg. Stainless steel is dishwasher-safe, but rinsing by hand is quicker during a shift.
