What is dry white wine?

Dry refers to sugar, not acidity

During fermentation, yeast converts the sugar in grape juice into alcohol. If the winemaker lets the process continue fully, almost no sugar remains and the wine is dry. Under European rules, a wine may be called dry with up to 4 grams of sugar per liter, or up to 9 grams if the wine has enough acidity. You do not taste that as sweetness. The vast majority of white wine in stores is dry: Gall & Gall has almost 600.

Dry does not mean sour or lacking in fruit. A Sauvignon Blanc can smell of passion fruit and a Viognier of peach, while still being dry. What makes the difference is mainly the grape, the climate and the oak. In a cool climate, such as the Moselle, the Loire or Austria, the acidity stays high and the wine is fresh and crisp. In warm regions, such as southern France, South Africa or Argentina, the grapes ripen more fully and the wine is richer. If the wine matures in oak barrels, notes of vanilla, toast and butter are added. You can broadly divide dry white wine into three styles: light and fresh, fruity and soft, and full and round.

What does dry white wine taste like?

From citrus and grass to peach and butter

Citrus & green apple

Sauvignon blanc, riesling trocken and grüner veltliner: lime, lemon, green apple and often something spicy or grassy. Crisp and thirst-quenching.

Fruity and soft

Peach & pear

Verdejo, pinot grigio and grillo: riper fruit, soft acidity and sometimes a slight bitterness on the finish, like almond.

Full-bodied and rounded

Tropical fruit & butter

Chardonnay, viognier and chenin blanc from a warm climate: pineapple, apricot and mango. Oak adds vanilla, toast and butter.

How to drink it

How to serve dry white wine

Cold, but not ice-cold. The fuller the wine, the slightly warmer you can serve it.

Fresh at 8 to 10 degrees

Serve light, fresh wines such as sauvignon blanc, riesling and pinot grigio at 8 to 10 degrees. That means a bottle that has been in the fridge for a few hours. Colder than that and you will taste little more than acidity.

Full-bodied at 10 to 12 degrees

Take an oak-aged chardonnay or a full-bodied viognier out of the fridge about fifteen minutes before serving. This brings out the fruit and creamy notes better. Pour into a roomier glass.

Storing an opened bottle

Replace the cork or wine stopper and store the bottle upright in the fridge. This keeps dry white wine good for two to three days. A light, fresh wine loses its fruitiness first.

What is dry white wine?
Dry white wine is white wine in which almost all the sugar from the grapes has been converted into alcohol. Most white wine sold in stores is dry, from sauvignon blanc and pinot grigio to chardonnay.
What is the difference between dry and sweet white wine?
The difference is the residual sugar. Dry wine contains almost no sugar; sweet wine contains 45 grams per liter or more. A dry wine can smell fruity, like peach or passion fruit, but does not taste sweet. If you are looking for something sweet, see sweet white wine.
Which dry white wine tastes good?
That depends on what you like. If you prefer fresh and crisp, choose sauvignon blanc, riesling trocken or grüner veltliner. If you want something softer and fruitier, try verdejo or pinot grigio. If you like full-bodied and round wines, choose chardonnay or viognier, especially if they have been aged in wood.
Which dry white wine should you use for cooking?
Choose a fresh, unoaked dry white wine, such as sauvignon blanc, pinot grigio or verdejo. It adds freshness to a sauce, risotto or mussels without overpowering the flavor. Do not use wine that you would not drink yourself.
How much alcohol does dry white wine contain?
Usually between 11.5 and 14%. Wine from a cool climate, such as German riesling, is often around 11.5 to 12%. Full-bodied wine from warm regions, such as chardonnay from southern France or viognier, can contain 13.5 to 14%. There is also alcohol-free dry white wine with 0%.
At what temperature and in which glass do you serve dry white wine?
Serve fresh wine at 8 to 10 degrees and full-bodied wine such as chardonnay at 10 to 12 degrees. Use a white wine glass with a smaller bowl for fresh wine and a larger glass for full-bodied wine. Do not fill the glass too full, so the wine stays cool.
